Zest are thin strips of the outermost, colored layer from the peel of citrus fruits or vegetables .

Manufacture and use

Zest are used to decorate desserts (citrus zest ) or soups and terrines (vegetable zest). Citrus fruit zests are suitable for flavoring baked goods , sauces and beverages , as the thin strips of peel are free from the bitter , white underside. Only untreated and unwaxed citrus fruits, such as organic citrus fruits, should be used for the production of zests . In addition, the fruits or vegetables should be washed and dried beforehand.

For the preparation of a zest can Zester ( zester ) may be used. This is a small kitchen tool with a blade with sharp-edged holes. Alternatively, thin strips of peel can be peeled off with a peeler and cut into fine, julienne- like strips on a cutting board with a chef's knife .

In the preparation and decoration of cocktails , citrus zest are used as a decoration. As a rule, the term zest means a thinly cut piece of the outer shell about the size of a thumb, but not a julienne strip.
