The pepper nut is a pastry specialty . The German cuisine knows different kinds of pepper nuts.

General

The pastries usually do not contain pepper , but the dough is usually spicy. As with gingerbread , also gingerbread are called, the name probably goes back to the Middle Ages, in general, than the exotic spices as pepper were called.

The outside of the pepper nuts is usually covered with a white frosting . More recently, the smooth underside with an additional chocolate coating can often be found . Special pepper nuts are also coated with pink sugar or are additionally decorated with sugary love pearls .

Regional particularities

Offenbacher pepper nuts

Offenbach am Main has been world famous for its pepper nuts since the 18th century. The city was mentioned in encyclopedias, trade fair catalogs, diaries and magazines in connection with the pastries. The state of Hesse had it served as a Hessian specialty at state receptions until 1980. From the 1980s on, the pepper nuts were temporarily forgotten. The pastry is a light and soft cookie that contains spices such as pepper, nutmeg, coriander and cinnamon. Allegedly the Offenbach confectioner Philipp Fleischmann created the recipe in 1757. Even Goethe liked the pastries. This has been available again since 2014.

Other areas

In northern Germany , they are hemispherical baked goods up to two centimeters in diameter and have a firm consistency. At the same time, the soft mops , which are based on a gingerbread-like dough and have a frosting glaze, are also offered there during Advent .

In southern Germany , the dough is made with lemon peel and orange peel, often also with almonds. It has to dry overnight and ideally has a nice “little foot” after baking. The southern German bakery knows the pepper nut as a protein biscuit. They are mainly offered and eaten during Advent .

In Saxony , there are small, uncoated gingerbreads measuring around three centimeters, which are cut from a rolling pin and baked. This makes the pepper nuts appear slightly angular or with a smooth cut edge. They are relatively dry and only develop their unmistakable taste while chewing.
