A Paris-Brest

A Paris-Brest [ paʀibʀɛst ] is a French dessert. It consists of a horizontal cut ring of choux paste , which with a hazelnut - butter cream filled and sprinkled with almonds and powdered sugar.

The French pastry chef Louis Durand from Maisons-Laffitte invented Paris-Brest in 1910. It was inspired by the Paris – Brest – Paris bicycle race that has been taking place since 1891 . The round shape of the Paris-Brests should be reminiscent of a bicycle tire.

Alan Richman of Gentlemen's Quarterly chose the cream pastry as the best dessert of 2010.
