Peptone

Peptone is a mixture of peptides and amino acids , which is produced from animal or vegetable proteins by hydrolysis by the enzyme pepsin or chemically by acids . Peptones only have a low molecular weight , which means that they are not precipitated by salt or clumped together ("agglutinate"). As a result, they remain dissolved and can be used, for example, in nutrient solutions for bacteria or yeast, for example in casein-soy-peptone agar .

Tryptically digested proteins (using trypsin ) are analogously referred to as tryptone and serve similar purposes.
