Pimientos de Padrón ( Galician : Pementos de Padrón ) are typical peppers that are grown in the area around Padrón in Galicia / Spain . At the same time, the name denotes a regional dish prepared from it, which is now common throughout Spain.

These are the unripe green fruits of a certain variety of capsicum annuum pepper , roughly the size of a jalapeño . After the discovery of America, peppers came to Spain, including Padrón, and were propagated there. The variety changed over the years and became what is now known as Pimientos de Padrón. The different degrees of sharpness of the individual fruits are typical of the variety. A Galician proverb reads: "Peppers from Padrón: some hot, some not." ( Galician " os pementos de Padrón, uns pican e outros non "). The content of capsaicin and capsaicinoids can be influenced by the fertilization.

In Padrón, around 15,000 kg of peppers are harvested between June and September each year, most of them in a valley in the Herbón district. The first Festa do Pemento de Padrón was organized there in 1979 , a popular gastronomic event that has been held annually on the first Sunday in August in the “carballeira” of the Franciscan monastery of Herbón. The Franciscans were also the ones in the 16th century, the first seeds of Mexico brought to Padrón and adapted the plant to the oceanic climate of the valley.

For the dish, the pimientos are fried in olive oil and sprinkled with coarse sea ​​salt (hail salt). It is served as an entree or tapa .
