Pinakbet , also pakbet , is a dish of the Filipino cuisine that comes from the Ilocano region in the north, but is common throughout the Philippines .

The word is the short form of the Ilokano word pinakebbet , which means shrunken . The dish consists of bagoong terong (fish paste made from fermented fish) and vegetables , mainly bitter melons , eggplants , tomatoes , okra , beans , chilli etc.

The dish is seasoned with ginger , onions , garlic and fish or shrimp paste .

The dish is cooked until most of the liquid has evaporated and the ingredients have shrunk , hence the name. In different regions of the Philippines there are regional variations of the dish in which additional ingredients are used (e.g. suckling pig ).

The dish is usually served with rice.
