Pommes dauphine , actually Pommes à la dauphine ( French: Potato Dauphiner Art ), are a dish made from potatoes . The name is translated into German as heir to the throne or crown princess .

This form of preparation was named after a name common in the French royal family for the king's eldest son, the Dauphin, or the wife of the son, the Dauphine .

For the preparation, a dough made from the same amount of potato croquette and charcuterie is mixed together. These are then portioned pear-shaped, breaded with flour , egg and breadcrumbs and then deep-fried at 170 to 180 ° C.

Under French dauphinois (s) or gratin dauphinois is understood au gratin potatoes.
