Pupusa
A pupusa is a tortilla with a baked filling. It is the national dish of El Salvador and also common in other Central American countries .
The tortilla is made from cornmeal , the filling usually from bean puree, cheese or a mixture of both. Variants can also be filled with fish, chicken, avocado, sausage or cheese with pork rind. Pupusas are usually served with curtido , a pickled coleslaw with chilli, and a tomato sauce and are typically eaten with the fingers .
Día Nacional de las Pupusas
A national holiday has been dedicated to El Salvador's national dish since 2005, and the associated legal decree lists the indigenous origins and popularity of the dish as reasons. The "Día Nacional de las Pupusas" takes place on the second Sunday in November of each year. The Ministry of Culture holds numerous events across the country on this day to preserve the custom and culture and promote export. The activities even go so far as to hold national competitions.
In November 2012, the largest pupusa to date with a diameter of 4.25 meters was made by 30 people in San Salvador and entered in the Guinness Book of Records . 150 kilograms of corn flour, 40 kilograms of cheese, 22 kilograms of pork rind and 22 kilograms of beans were used for the preparation.
Economical meaning
Despite the low unit costs of around 50 to 100 cents (¢) in El Salvador, the pupusas are a not insignificant part of the country's economy. According to the Ministry of Economy of El Salvador, sales between 2001 and 2003 were $ 22.8 million. The export, to the USA alone, was around 605 million US dollars in 2005. In the USA, the pupusas are sold for around two US dollars each.
With regard to jobs, the Ministry of Economic Affairs also reports that around 250,000 people in El Salvador are employed in the production of pupusas.
