Puttu

Puttu ( Malayalam : പുട്ട്, Tamil : புட்டு) is an Indian dish that is particularly widespread in the southern Indian state of Kerala as well as in Tamil Nadu , Andhra Pradesh and Sri Lanka . These are steamed cakes that are traditionally made from coarse rice flour and coconut and served for breakfast with bananas, chickpeas ( kadala curry ) and papadam . In addition, there are numerous variations; to sweet puttu with jaggery , ghee and cardamom . In Kerala, puttu has the status of a national dish.

preparation

To prepare puttu, roasted rice, but also wheat or foxglove flour is moistened, layered between desiccated coconut in a puttu cooker and finally steamed for a few minutes. The puttu cooker consists of two segments. In the lower part, water is brought to the boil, whereby the steam in the upper part cooks the puttu. There are different versions of puttu cookers, with cylindrical attachments being the most common and giving the puttu their characteristic shape.
