Jaggery
Jaggery (also transcribed as jaggeree ) is traditionally unrefined sugar ( cane sugar ) that is used throughout South and Southeast Asia .
origin
Although the term jaggery is used to refer to both sugar cane and date palm products, the word only refers to sugar cane sugar. The palm sugar , made from the sap of the date palm, is not only more expensive, but also less common outside of the areas where it is made. The sago palm and coconut palm are also tapped for sugar production in southern India. In Mexico and South America , similar sugar cane products are also known as panela , piloncillo or rapadura (Brazil). In Myanmar , jaggery, known there as htanyet , is made from the syrup of the Caryota.
The main producer of jaggery is India. The district of Muzaffarnagar in the state of Uttar Pradesh has the largest jaggery market in the world, followed by Anakapalli in the district of Visakhapatnam in Andhra Pradesh .
Jaggery comes in blocks of pastes from solidified sugar syrup concentrates that have been heated up to 200 ° C. Traditionally, the syrup is made by boiling pure sugar cane juice or palm juice in a large vessel with a round bottom (see photo).

Jaggery contains more mineral salts than refined sugar and, moreover, no chemical agents are required to make it. Indian Ayurvedic medicine values jaggery for its benefits in curing throat and lung infections . Through animal experiments with rats, Sahu and Saxena found that jaggery can prevent lung damage from particulate materials such as carbon and silicon dust. Gandhi believed that jaggery was healthier than refined sugar because it did not pass into the blood as quickly and also recommended it in his own goat milk diet.
use
Jaggery is used as an ingredient in both sweet and savory dishes in India and Sri Lanka . For example, jaggery is used in the South Indian sauces sambar and rasam and is sometimes added to the Nordic dal . Another use is jaggery as a sweet , for example pure, as toffee or processed into cakes. Jaggery is also used in the preparation of some spirits. In addition, jaggery is seen as auspicious in parts of India and consumed on special occasions.
In Myanmar, jaggery, called htanyet, is traditionally consumed in the evening with a cup of green tea and is also known locally as Burmese chocolate. Jaggery is also mixed with coconut , plum or sesame in Myanmar and can be found in typical local cuisine.
In addition to being used as a food, jaggery is also used to flavor the tandoor oven.
