A sponge cake is a cake made from fat , egg , flour , starch powder , milk , aroma and, if necessary, leavening agents, which is characterized by a juicy crumb . The batter is stirred to a foam and must not be whipped, although it is prepared in different recipes.

Typical sponge are, for example pound cake (also called marble cake ), king cakes , cup cakes and English cake . Sheet cakes and sponge cakes are also increasingly being offered. It is common practice to coat the cooled cakes with couverture or fondant glaze or to sprinkle with roasted planed almonds or icing sugar.

  • Eggnog cake is a heavy sponge cake made from a mass of sand, flavored with eggnog or egg liqueur paste.
  • Tea cake is made from a light mass of sand, often with marzipan or fruit deposits, and in box-shaped baking tins.
  • Lemon cake : For this, the dough is flavored with the juice of lemon or lemon flavor , grated peel or zest of it. Lemon liqueur (e.g. limoncello ) is sometimes used in Italian cuisine . It is typically covered with a glaze made from powdered sugar , water and lemon juice , and more rarely also fondant .
