Rassolnik ( Russian рассольник ) is a slightly sour meat or fish soup used in Russian and Ukrainian cuisine. The special taste is created by chopped pickles and their brine .

To prepare it, pickle brine is heated (diluted with water to taste) and beef cooked in it. When the beef is tender, it is removed, chopped up and put back into the pot with finely chopped root vegetables, onions , peppercorns and bay leaves . Then the soup is boiled for another 10–15 minutes and seasoned with garden herbs (especially garlic leaves ). The pickles are only added a few minutes before the end of the cooking time, otherwise they will boil over.

Fish can also be used instead of beef. Usually pearl barley is also added.
