Ratafia (wine)

In Champagne and Burgundy, Ratafia describes a mixture of grape must and brandy , usually enjoyed as an aperitif , comparable to the Pineau des Charentes . This Ratafias be partly mislabeled as aperitifs based on wine, but this is not true because no fermentation of the grapes takes place. Here the process for the Pineau des Charentes or Floc de Gascogne is comparable. The ratafia from Champagne is made from grape must of the appellations "Champagne" or "Coteaux champenois" and a neutral alcohol. Fine or Marc de Champagne are only used for the highest quality . In Burgundy, the Ratafia is made with Marc de Bourgogne and must of the same origin.
