Rum pot

A rum pot is a method of preserving fresh fruit with rum or arrack and sugar .

For production, ripe fruits are gradually placed in a glazed ceramic pot with roughly the same amount of sugar and high-percentage rum over the course of the summer . The fruits must always remain covered with liquid. When stored in a cool, dark place, sealed airtight, the rum pot is ready in winter and can be served as a compote with semolina pudding and other desserts.

Berries , cherries , plums , apricots and other fruits are suitable .
