Sage Derby, an English cheese flavored with sage

Sage Derby is a cheddar- like herbal cheese to which sage leaves are added to give it flavor and color. This gives it a green marbling. This cheese matures for around twelve weeks and is mild like cheddar.

Sage Derby is one of the oldest cheeses in Great Britain and one of the few cheeses to which the additive, here sage, is added during production and not at a later stage.

The custom of adding sage to cheese dates back to the 17th century when it was discovered that sage was good for health.

Sage Derby was originally eaten around harvest time and at Christmas. As a colorful cheese, it looks good on a cheese platter . It is also served with the British “ plowmans meal ” because it is said to be good for digestion.
