Cream stabilizer
A cream stabilizer (also known under the brand names Sahnesteif or Sahnefest , known in Switzerland as a cream holder ) is an aid for the preparation of whipped cream that makes the cream foam firmer and prevents water from settling. The most important ingredient is usually a binding agent that works without heating, such as cold-binding gelatine or modified starch .
Various cream stabilizers have been available in stores since 1967 under the name “Sahnesteif”. The term was originally a registered trademark of Dr. August Oetker KG ("Dr. Oetker cream stiffener" from January 1967) and Vogeley Lebensmittelwerk GmbH ("Vogeley cream stiffener " from December 1967). The term is now considered a generic brand name for cream stabilizers in general.
