Saint-Pancrace (cheese)

The Saint-Pancrace is a French raw milk cheese made from goat milk . It is a Fermier cheese in which the cheese maker owns the animals whose milk he processes. The cheese matures for around two to three weeks.

The blue mold spots that form on the drying bark are characteristic of the Saint-Pancrace. The dough is firm and smooth. The aroma is mild and slightly sweet. The fat content in the dry matter is 45%.

The cheese is sold in a loaf with a diameter of 11 centimeters.

This cheese goes well with Condrieu as a wine .
