Salatrim

Salatrim is the abbreviation for English Short and long chain acyl triglyceride molecule , short- and long-chain triacylglycerol molecule ' . It is a new food ingredient that was approved by the European Commission as a low-calorie fat substitute in accordance with the Novel Food Regulation in 2003 . In 1999 Danisco , formerly Cultor Food Science, applied for approval in the United Kingdom . The EU Scientific Committee on Food stated that salad rims are safe for human consumption.

“A clear, slightly amber colored liquid to a light colored, waxy solid at room temperature. Free of suspended matter and foreign or rancid odor. ”According to § 2 of the Nutritional Value Labeling Ordinance and Annex XIV of the Food Information Ordinance, the calorific value is to be given as 25 kJ / g (6 kcal / g).

Manufacturing

Salatrims are obtained through the mutual transesterification of short-chain triglycerides (e.g. triacetin or tributyrin ) with long-chain, saturated edible fats.

Restrictions on use

Food made with the use of salad rims must contain an appropriate notice that ingestion of high amounts (ie> 30 g / day) may cause gastrointestinal complaints. In addition, a notice must be attached that products containing salad rims are not intended for children.
