Salt mushroom

Salt mushrooms are a specialty of Russian cuisine that is served as a starter to vodka or as an ingredient in other dishes such as shchi or solyanka .

To make it, edible mushrooms are dry-cleaned, large mushrooms are cut up and stacked upside down in a tall vessel. Each layer is heavily salted, depending on the type of mushroom and recipe, pepper and chopped onions are added. The salt mushrooms are ready to eat after two to six weeks and can be kept for a longer period of time. Before serving, they are soaked in water to remove some of the salt.
