Choron sauce

Sauce Choron or Choronsauce is a variant of the béarnaise sauce (more rarely the Dutch sauce ) that is mixed with tomato paste .

For preparation, a béarnaise sauce is supplemented with tomato paste, although tarragon and chervil may be omitted depending on the recipe .

It was named after the French chef Alexandre Étienne Choron (1837–1924).
