Saucisse d'Ajoie
The Saucisse d'Ajoie ( ) is a smoked sausage from the Swiss canton of Jura .
The sausage from the Ajoie region can be fried or grilled . It contains pork and caraway seeds .
The Saucisse d'Ajoie is traditionally served with sauerkraut at the regional St. Martins Festival on the second Sunday after All Saints Day . The name has been a protected geographical indication since 2002 .
