Green beans are cut into thin strips ( finely chopped ) beans; The reason for this method is that runner beans that are almost fully ripe are relatively hard and have threads that interfere with eating.

For the sake of simplicity, schnippel beans is also used to describe a traditional stew, mashed pot or soup in German cuisine . It is made from cut beans, beef , potatoes and sausages and seasoned with savory . Schnippel beans is a typical dish of autumn and winter.

Before the freezer was available or the possibility of boiling down, the beans were preserved by lactic acid fermentation , similar to sauerkraut . In the Rhineland , this variant of the sour beans , called Rhenish Schnippelbohnen , is still popular. Pears are often cooked here, which gives the dish a sweet taste.
