The dairy is the management company of the dairy industry .

Milk processing

In the dairy (also Senntum called) is local milk to dairy products such as cheese , butter , buttermilk , plugs , yoghurt processed (versennt) . Since the technical requirements for the production of cheese from pasteurized milk are seldom met, it is very often raw milk cheese . An alpine dairy can be compared to a dairy . However, the dairy is usually structured on a small scale. Many such small-scale dairies can be found in the western part of Austria ( Tyrol , Vorarlberg ) in particular . There are some alpine dairies that sell less than 1 million liters of milk a year, i.e. refine the milk into the above-mentioned products.

In the Alpine region, the dairy is part of the Sennhof (obsolete Schwaighof , also Swiss ) and the alpine farm .

history

Alpine farming emerged as a result of transhumance , i. H. the annual upward movement of grazing cattle (sheep, goats, cattle) on high pastures.
