Sfincione is a variation on pizza in the Sicily region .

General

In addition to the obligatory cheese slices and tomatoes, anchovies are also placed on the yeast dough . Instead of the mozzarella common in pizza, pecorino is usually used. Another difference between pizza and sfincione is the thicker, slightly sweetened batter.

Variations

There are different types of preparation depending on the location:

Sfincione Caltanissetta

The ingredients of Sfincione Caltanissetta include tomatoes, sheep cheese and anchovies, olives , onions and garlic . The ingredients are distributed in recesses in the dough and covered with a tomato sauce.

Sfincione di Palermo

The amount of dough is about half that of the Sfincione Caltanissetta. In addition to the sheep's cheese, a spicy cheese such as the provola and parsley are also added.

Sfincione di Patate

Here the dough is made in equal parts from potatoes and flour with yeast. In addition to sheep cheese, salami is used as an ingredient . Usually no tomatoes are added, but it is possible depending on your taste.
