Sopaipilla (also sopaipa in rural areas ) is a South American dough specialty, mainly from Chile , Bolivia and Argentina .

The basis of the sopaipilla is pumpkin ; Sopaipillas can be eaten sweet (e.g. with applesauce ) or traditionally salty with a salsa ( aji chileno or pebre ). There is no precise recipe, as the consistency of the batter depends on the pumpkin. The pumpkin flesh is cut into small pieces and boiled in salted water until soft. Then the pumpkin pieces are kneaded into a tough dough with flour, a little oil or butter. The dough is rolled out and the sopaipillas are cut out with a round shape. Then they are fried in hot oil.
