Spettekaka

Spettekaka (roughly: "skewer cake") is a Swedish pastry specialty that is especially made and enjoyed in southern Sweden . " Skånsk spettekaka " is a protected designation of origin in the European Union .

Spettekaka is made from eggs, potato starch and sugar. The liquid dough is run in a ring on a rotating wooden skewer in front of an open fire - similar to the production of Baumkuchen . The cake is very dry and is kept in its transparent, airtight bag until just before consumption. It is eaten in small pieces, which are traditionally sawn with a saw blade in order to avoid too large crumbs.
