Spinach mat

A spinach mat (also called spinach color or spinach green ) is used to color foods such as sauces or pasta .

To make it, spinach is pounded in a mortar , the resulting juice is strained through a cloth, heated in a water bath until the juice coagulates and finally the released liquid is poured off. The remaining "mat" can then be used as a dye.
