Starch citrate

Starch citrates are derivatives of starch which belong to the starch esters .

Manufacturing

Starch citrates are produced by reacting starch with citric acid in a polymer-analogous reaction . Since not all of the starch's hydroxyl groups react in this reaction , mixtures with different degrees of substitution are formed . The degree of substitution of the individual starch components within a polymer can also vary:

application

They are used in food technology for frozen goods.
