Starch phosphates

Starch phosphates are derivatives of starch which belong to the starch esters . This modified starch is one of the food additives . Monostarch phosphate is labeled E 1410 and distarch phosphate is labeled E 1412 .

Manufacturing

Starch phosphate is produced by reacting starch with monosodium orthophosphate or disodium orthophosphate in a polymer-analogous reaction . Since not all hydroxyl groups react in this reaction , mixtures are formed with different degrees of substitution . The degree of substitution of the individual starch components within a polymer can also vary.

application

They are used especially for acidic foods that are strongly heated (sterilized).
