The Sudachi ( Citrus Sudachi, Japanese : 酢 橘 ) is a round, green and small citrus fruit from Japan. Since the citrus fruit is very acidic, it is not eaten as a fruit, but used as a food flavoring as a substitute for lime and lemon . It is a hybrid of yuzu and another citrus fruit related to the koji orange and the tachibana orange. Also, the sudachi is a specialty in Tokushima Prefecture , Japan.

General

The sudachi is almost as famous in Japan as the yuzu, a well-known citrus fruit in Japan. It is mainly used to flavor matsutake mushrooms . Pon vinegar ( ポ ン 酢 Ponzu ), an alternative to traditional vinegar, is made from Sudachi. 98% of all Sudachi fruits from Japan come from Tokushima Prefecture in Japan. The best producing municipalities are Kamiyama-cho Municipality and Sanagouchi-son Village, which, according to 2008 statistics, ranked 1st and 2nd with almost half of the annual production of the prefecture. The Sudachi has white flowers that bloom in May and June. The fruits form in grape-like shoots. The sudachi is usually still harvested when it is green, but it turns green-orange after a while

The fruit is pressed or served as a slice with traditional dishes in Japan ( Udon , Nabemono, etc.). It is also served in drinks. It is considered more aromatic and fresher than traditional limes, which is why it is so popular in Japan. They also contain more vitamin C than lemons and limes.

The fruit is now also grown commercially in some parts of California since it was made available to nurseries in 2008.

Products

Many of the Sudachi products are made in Tokushima Prefecture, Japan , as this is where most of the plantations are located. The sudachis can be sold there cheaply and in bulk. The sudachi is mainly used for flavoring. It is also served as a side dish to fish and soups. But also beverages, such as B. Cocktails are served with sudachi. Tokushima also makes Sudachi lemonades , Sudachi ice cream and Sudachi ice pops.

Classification

The name of the Sudachi was coined by Mitsutaro Shirai (1933). Even so, many modern scientists only view the sudachi as a subspecies of other citrus fruits. The latest genetic analysis showed that it was a cross of yuzu and another Japanese citrus fruit related to the koji and tachibana orange.
