Sylter Royal is the brand name under which the company Dittmeyer's Austern-Compagnie in List on Sylt markets a farmed oyster of the Pacific oyster species . The Sylter Royal is the only oyster that is produced in Germany and has a high meat content, which can be up to 20% of the total weight. The taste is described as delicately nutty and not very salty. . The oyster fishery has on the North Frisian islands a thousand years of tradition.

History of the oyster in Germany from 1964

Between 1964 and 1972 the Biological Institute Helgoland made repeated attempts to release oyster seedlings in plastic containers, for example in Munkmarsch. In 1976, 90 percent of the oysters released were destroyed by ice drift. Later, the Federal Research Institute for Fisheries, under the leadership of Thomas Neudecker, with the support of mussel fishermen from the islands of Sylt , Föhr and Amrum, launched a new type of oyster for this region, the Pacific rock oyster ( Crassostrea gigas ) in small-scale trials. The experiments achieved good results in terms of taste and meat content.

Neudecker's federal research project expired in 1985 after ten years. Clemens Dittmeyer took over Neudecker as a temporary consultant and founded the company Dittmeyer's Austern-Compagnie in 1986 . Until then, it was unclear whether commercial use would be successful, but success finally came.

The rearing system of the Sylt Royal

The oysters are stored in mesh bags called poches on iron tables, a method known as table cultivation . The rearing area is in the Blidsel Bay near List . In order to achieve a uniform shape and texture of the shell, the target market weight of 80 grams and all quality criteria of the oyster, constant sorting and control are required.

The danger of ice from November to March means that the oysters have to be overwintered on land.
