Syrniki ( Russian Сырники , Belarusian Сырнікі , Ukrainian Сирники / Syrnyky ; also called Tworoschniki , творожники ) are fried dumplings made from quark dough. The dish comes from the Russian or Ukrainian cuisine and is similar in its preparation to the Saxon curd cheese .

The name is derived from the Russian and Ukrainian word Syr (Russian: Сыр ; ukr .: Сир ), which means quark in Ukrainian and which was used to describe a type of layered cheese in Russian .

Quark is mixed with flour, eggs, sugar and salt to make the dough. Depending on the variant, raisins, carrots, dried fruits, potatoes or nuts are added to the dough. The finished mass is then fried in vegetable oil.

Syrniki are eaten for breakfast or as dessert and served with smetana , powdered sugar, or varenje .
