Taco al pastor

The taco al pastor is a type of pork taco popular in Mexico and originally comes from central Mexico. It probably developed from the Arab meat dish shawarma , which was once brought to Mexico by Lebanese immigrants. Tacos al pastor is in the broadest sense comparable to the Turkish doner kebab or the Greek gyros . The name of this dish is Spanish and translated means something like taco after "shepherd's style".

preparation

The pork is put in a marinade of dried chilli and achiote for one to two days and then cooked on a rotating skewer, similar to a kebab, with an open flame. The top of this skewer is usually peppered with fresh onions and pineapple. When the meat is done cooked, it is thinly cut off the skewer with a large knife. It is placed in small corn tortillas and garnished with finely chopped onions, coriander and pineapple. Depending on your taste, the taco al pastor is then seasoned with lime juice and chilli sauce.
