Shawarma ( Arabic شاورما, DMG šāwarmā , Hebrew שווארמה, borrowed from Turkish çevirmek "turn around, turn around") is a meat dish in Arabic cuisine that has spread beyond the Middle East to Europe and other parts of the world.

It is mainly consumed in Lebanon , Syria , Jordan , Egypt , Palestine and Israel . Like doner kebab ("rotating grilled meat"), it consists of large slices of meat seasoned in a marinade , which are placed in layers on a special, vertical rotisserie spit and grilled , and of which the outer, browned layers are gradually thinned with a large knife be cut off.

Originally only mutton or lamb was used for shawarma , today beef and poultry such as turkey or chicken are also common. Before being placed on the skewer, the pieces of meat are marinated for a few hours in a lemon juice marinade with a variety of spices such as: B. cinnamon , cumin , coriander seeds , cardamom , turmeric , cloves , paprika , pepper , mint and garlic , which gives the dish its typical, slightly sour taste.

Shawarma is usually served as a snack in a thin pita bread wrapped - often along with tahini (sesame paste), sumac and fried or lactic acid pickled vegetables and salad. In the Dutch kitchen , a slightly modified dish is offered in fried form as Shoarmarol (shawarma roll ).
