Tahdig ( Persian ته‌دیگ), also Tadig , is an Iranian or Caucasian rice dish that comes from the crust that the rice has formed on the bottom of the pot.

Tahdig is served hot on the plate with a golden crust. With potato tahdig, however, the rice is prepared on thin, layered potato slices that become crispy when cooked.

For example, tahdig is served as a cube- shaped starter with beef, beans, peas, tomatoes, fried eggplant and potatoes.
