Tatar hat

A Tatarenhut is a special Fondue appliance in the conical shape of a traditional hat of Tartar . The hat is made of heat-resistant sheet steel, on the outside of which steel tips or knobs are evenly spaced by several centimeters. At the lower edge of the cone there is a "hat brim", a circumferential, welded juice channel. The Tatar hat is widely used in Switzerland, Austria and Saxony and is also offered by some restaurants there.

There are various devices on the market:

  • In the original version that still exists today, the Tatar hat is fired with charcoal . The advantage of this design lies in the even distribution of heat over the entire surface of the hat.
  • Heating by three burners operated with fuel paste or liquid alcohol as in a rechaud or fondue device.
  • Electrically powered tatar hats that can also be used for raclette .

Meat, fish, vegetables and mushrooms are cut into slices at least two millimeters thick. In the juice channel is a Bouillon filled. Finely chopped raw vegetables are also often added to the juice groove. You hang the food on the steel tips of the heated hat and cook your own meal. The bouillon in the groove of the hat is enriched with the dripping juice of the food while the appliance is being used. Sauces, other vegetables and side dishes such as gherkins , pickled onions and bread are served with the finished food .
