Teppanyaki ( Japanese 鉄 板 焼 き , kana て っ ぱ ん や き ) are dishes of Japanese cuisine that are prepared on a steel plate ( 鉄 板 teppan , literally "iron plate") directly at the table.

history

This form of preparation originated in Spain. Seafarers heated iron plates and prepared their meals on them. The way of cooking came to Japan through travels.

In corresponding restaurants, teppan are integrated into the preparation areas at the counter or embedded directly into the guest tables. Many Japanese households have a portable heating plate. Visually, the teppan is similar to the plancha . Indirect heat is used on both grills.

Typical Teppanyaki food is okonomiyaki (incl. Hiroshima-yaki and Modanyaki) monjayaki and yakisoba .

Nowadays, grilling on stainless steel plates (teppanyaki) is particularly common in Japan. It has also expanded to Europe and worldwide via Japanese restaurants. The central part of the grill process is the preparation of meals in front of the guests. This results in a high social communication factor. In terms of health, the particularly low fat consumption and the hygienically simple cleaning of the grill plate should be emphasized.

In the meantime, the grill plates and teppanyaki grills are also being manufactured and further developed in Europe.

By using a "sandwich plate" with a core made of steel, encased in stainless steel , the heat conduction and heat distribution can be significantly improved compared to pure stainless steel.
