Okonomiyaki ( Japanese お 好 み 焼 き ) is a Japanese dish . Okonomi means “taste”, “to like” in the sense of “what you want”; yaki means "fried" or "grilled". Traditionally, okonomiyaki is fried at the table on a hot iron plate (Japanese teppan ) with the help of a spatula . The basic ingredients are water , cabbage , flour , egg and dashi , other ingredients are added as desired; they vary depending on the region of Japan. All types of meat and fish , vegetables , mochi or cheese are suitable for this . The ingredients are mixed in a bowl and poured onto the hot, greased teppan , where the flatbread is cooked through. Okonomiyaki are roughly shaped like a pancake . It is seasoned with a special okonomiyaki sauce and katsuobushi (dried and grated tuna ). Due to the method of preparation and the variable ingredients, the dish is also called Japanese pizza , but the dish has no other resemblance to pizza.

Okonomiyaki is a specialty in the Kansai region, especially Osaka , and Hiroshima . In Tokyo there is a similar dish called monjayaki .

Kansai variant

The Kansai variant is baked on both sides and turned over with spatulas on the teppan and divided. The parts are decorated with nori , katsuobushi , mayonnaise or ginger . Darker vegetables are commonly used in Kyoto . With noodles, it is also known as Modanyaki ( モ ダ ン 焼 き ).

Hiroshima variant

In the Hiroshima style okonomiyaki (広 島 風 お 好 み 焼 き "hiroshima-fū okonomiyaki"), also called Hiroshima-yaki ( 広 島 焼 き ), a kind of crepe is also first prepared on the teppan. The cabbage cut into fine strips and the spices, then the meat and seafood cut into small pieces are layered on this and cooked together. Meanwhile, cooked soba (buckwheat noodles) are fried separately on the teppan and then spread on the flatbread. The whole thing is turned on the plate and further baked with the pasta facing down. Then the okonomiyaki is placed on a specially prepared egg, fried and then turned over again. The portions are cut off in portions with a spatula and placed on your own dinnerware and consumed with okonomiyaki sauce.
