Torta del Casar
Torta del Casar is a Spanish sheep cheese . It comes from the autonomous region of Extremadura and is named after the place of origin Casar de Cáceres . Its production is protected by the Designation of Origin ( DO ) Torta del Casar .
The cheese is made exclusively from raw milk from Merino and Entrefino sheep , which is not curdled with rennet , but with an infusion of flower parts of the wild vegetable artichoke ( Cynara cardunculus ). Inside, the cheese is soft to runny and has a very intense taste. In a Torta del Casar, cut an opening in the very hard shell to eat and scoop the contents out with a spoon.
Torta del Casar is served as a side dish to pork dishes.
