Toucy (cheese)
The Toucy is a French raw milk cheese made from goat milk . Production area is the north of Burgundy .
The light and pleasant taste is characteristic. The cheese must mature for at least ten days before it can be placed on the market. It then has a diameter of six centimeters. The fat content in the dry matter is 45%.
The right wine for this cheese is a Sauvignon , preferably a Sauvignon de St Bris .
