Tournedos Rossini describes a classic garnish or method of preparation of a fillet steak .

The small beef fillet slices are fried individually as desired, covered with a generous slice of fried foie gras and sprinkled with black truffles . The dish is completed with a Madeira sauce or Albufeira sauce . Tournedos Rossini was created by the chef of the Parisian restaurant Maison dorée, Casimir Moisson, and is named after Gioachino Rossini .
