Trinitario (cocoa)

Trinitario is a variety of the cocoa tree ( Theobroma cacao ) and represents an important basic type of cocoa variety . It is named after the island of Trinidad , on which the Trinitario has its origin. There cocoa of the Criollo type was cultivated until a large part of the stocks was destroyed by a natural disaster in 1727. The plantations were reforested with Forastero cocoa from eastern Venezuela , so that the Trinitario was created through natural hybridization from the remaining criollos and the imported Forasteros. Trinitarios partially combine the resistance properties of the Forastero with the pleasant taste properties of the Criollo. They have a strong cocoa taste and can produce expressive aromas. The share of all fine cocoa, including Trinitario, in world production is around 5 percent.
