Tukir (also Tuquir ) is a traditional method of food preparation in East Timor , in which meat , sometimes together with rice and / or vegetables , is cooked outdoors on an open fire . It is used at family celebrations and other celebrations.

The meat, especially lamb and goat , is first heavily seasoned. Typical spices are turmeric , garlic , tamarind , lemon or lemongrass . Then the meat is filled either alone or together with rice and / or chopped vegetables in bamboo tubes about 60 cm long and these are placed on the fire. When the meat has finished cooking, the pipes are simply split open.
