Urfa biber , also known as isot chili , is a dried Turkish chili pepper. It is the Capsicum annuum variety that is grown in the Urfa region of Turkey. The taste of the final product is often described as " smoky " and " raisin-like ". Basically, Urfa biber is an ordinary chilli pod that ripens until it takes on a maroon color. After harvest, it is subject to a two-step process. During the day the pods are dried in the sun, while at night they are carefully packed. This nocturnal process is known as sweating , in which the pods that have dried on during the day draw some moisture again. This fermentation process gives the pods a dark purple to almost black color. Urfa biber is not considered to be quite as aromatic as other chilli varieties, but provides a longer-lasting spiciness impression.

On the Scoville scale , the sharpness is indicated between 30,000 and 50,000 SHU ( Scoville heat units ).

Traditionally, Urfa biber is added to meat dishes and other savory dishes in Turkey.
