Vanillekipferl are traditional German - Austrian - Bohemian Christmas cookies in the shape of a croissant . In addition, vanilla croissants are also part of the tea biscuits .

They are made from a shortcrust pastry made from flour , butter , sugar and grated almonds , often also roasted almonds - but also walnuts , peanuts or hazelnuts depending on the region . Adding egg yolks to the dough make shaping the croissants easier , but the result is less crumbly and tender. The dough is shaped into finger-length spindles, bent into croissants, baked and then turned in powdered sugar or sugar that is flavored with the pulp of vanilla pods while still warm .
