The Vitelotte (also Négresse , Truffe de Chine , blue French truffle potato , in Germany also known as the “blue potato” ) is a blue-purple original potato variety.

history

It comes from Peru and Bolivia , the South American original home of the European potato , and is cultivated there to this day. It is probably a 200 year old cross of Peruvian original varieties. Farmers from Baden-Württemberg also succeeded in cultivating them in 2004 .

It forms long oval tubers with deep eyes that are dark purple-blue to almost black on the outside thanks to a high content of the natural coloring agent anthocyanin . Inside, the raw tubers have a light and dark purple-blue streak, after boiling the purple-blue color is partly distributed. With a length of about ten centimeters, they are medium to small in size. They are not very productive and are harvested entirely by hand, which usually results in an above-average price. They ripen late, have a dark blue, thick skin (reminiscent of beetroot ) and can be stored well. The potato is waxy and retains its color even when cooked. The purple-blue endosperm of the potato has a taste similar to that of the sweet chestnut. It is less sweet than our common potatoes.
