A vatrushka ( Russian , Ukrainian and Belarusian ватрушка ) is a quark pocket that comes from Eastern European cuisine. The name is derived from the Old Slavic word Watra ( ватра ; in German fire ).

Watruschkas are usually made from yeast dough . This is first rolled out and cut into small portions. A quark mixture is placed in the middle of the saucer-sized pieces of dough . Depending on the recipe, the mass can contain raisins, apples or berries, among other things. The edges of the dough are then folded over so that the quark filling remains visible in the middle. The dough is left to rise, coated with egg yolk and butter and then baked in the oven.
