Viennese laundry girls

Viennese laundry girls are a well-known warm pastry with apricots in Austrian cuisine .

For the preparation of Viennese laundry girls you need ripe apricots

The apricots are briefly blanched , the stones released and the pitted fruit marinated with icing sugar (powdered sugar) and liqueur . Instead of stones, marzipan balls are filled. Then a batter is made. The filled fruits are pulled through the batter with a fork and the "laundry girls" are baked golden brown in hot fat. Then drain them on kitchen paper and sprinkle with icing sugar before serving.

The name “Viennese laundry girls” comes from a profession that in 19th century Vienna had a reputation for being cheerful and fun-loving. The “laundry girls” were immortalized in genre pictures, such as by Josef Engelhart, as well as in films.
