Zillertaler Krapfen are a dish of Austrian cuisine that was originally distributed in the eponymous Zillertal , but is now prepared all over Tyrol .

Depending on the recipe, the donuts contain flour, milk, potatoes, butter, cheese or curd cheese. They are complex to produce and are considered a traditional farmer's dish in the Zillertal. Zillertal donuts are a popular dish and are often served on festive occasions such as folk festivals or Christmas markets.

The donut dough is made from flour, milk and salt and, after a short resting time, is shaped into small balls, which are then flattened into a "leaf" shape. Then pressed, boiled potatoes with grated Tyrolean gray cheese as well as chives and salt are rolled into the dough as a filling, before it is baked in the hot fat and then consumed immediately.
