The sugar content or total sugar content describes the proportion of sugar in the total mass or total volume. It is usually in food in percent specified. For example, jam can have a total sugar content of 60%. This means that out of 100 grams of jam, 60 grams are sugar from a chemical point of view. However, this information does not say anything about the type of sugar, for example as fructose .

The sugar content can be specified in degrees Baumé , degrees Balling or degrees Brix . The Oechsle degree unit can also indicate the proportion of dissolved substances (mainly sugar) in the must.
